Q. When you see the word Botrytis or Noble on a label what does that mean?
A. The word botrytis or noble is short for Botrytis cinerea. Botrytis cinerea is the special fungus that attacks the grapes, shrivelling and concentrating them and modifying flavour to produce great, complex sticky, sweet white wines. At Peter Lehmann Wines we use the Semillon grape for our botrytis wine.

In your opinion, which wine style/grape variety does Australia do best?
Currently Riesling is the real star. Bright and fresh and wins fans every day around the the world. But watch out for Semillon Sauvignon Blanc blends and a revival of Australian Chardonnay to something leaner and fresher, almost a complete 180 on the style we've become known for.
Tell me what is your most favourite food dish?
A grilled sausage in bread, with slow cooked onions and tomato sauce...seriously!
